I recently shared this favorite recipe of mine on Insta Stories and I got such a big response I decided to dedicate a blog post to sharing this very easy White Bean Chili recipe with all of you! When I’m not in the mood to cook (which is almost ALWAYS) I always try to find crock pot meals. They are easy, fast and simple. What is better than that? Nothing I tell you! Plus it’s so so so yummy and good any time of the year. I even don’t mind it in the summer because it has a Mexican flavor to it and I’m always craving Mexican 🙂
In Crockpot
1 lb. of shredded chicken or turkey (I use one rotisserie chicken)
3 cups chicken broth (add more if needed)
2 cans of Great Northern Beans, drained and rinsed
1 can of Cannellini Kidney Beans, drained and rinsed
1/2 white onion, chopped
2 T cumin
2 T Garlic Powder
2 T Parsley (I use fresh)
1 teaspoon Cayenne Pepper
1-2 Bell Pepper (I love yellow)
1-2 jalapeno Peppers
1 lb. of shredded chicken or turkey (I use one rotisserie chicken)
3 cups chicken broth (add more if needed)

Ready to Serve
Shredded cheese
Sour Cream or I love using Plain Greek Yogurt
Lime
Tortilla Chips
Instructions
Insert all ingredients
Cook on low for 6-8 hours
Squeeze lime juice into each bowl
Add sour cream or plain greek yogurt
Add shredded cheese
